Bacon, Mushroom, and Oyster Stuffing

I created my own oyster stuffing recipe with bacon, onion, mushrooms, and oysters because I could never find the perfect one. With grilled turkey, it is excellent.

Ingredients

  1. 1 pound bacon
  2. ½ cup butter
  3. 1 onion, sliced thin
  4. 2 cloves garlic, minced
  5. 1 (4 ounce) package fresh mushrooms, sliced
  6. 1 cup white wine
  7. 2 cups chicken stock
  8. 1 (14 ounce) package seasoned stuffing cubes
  9. 1 (10 ounce) jar oysters, drained and cut into thirds

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place bacon in a large, deep skillet; cook over medium-high heat until evenly brown. Remove bacon to a paper towel-lined plate to drain. Reserve drippings in the skillet.
  3. Add the butter to the bacon drippings and melt over medium-high heat. Cook the onion, garlic, and mushrooms in the butter and drippings until the onion has caramelized, 10 to 15 minutes. Pour the wine into the skillet; allow the wine to warm; remove from heat.
  4. Place the stuffing cubes in a large bowl. Pour the vegetable mixture over the cubes. Add the chicken stock. Fold the oysters into the mixture. Transfer the stuffing to a 9×13 inch baking dish.
  5. Bake in preheated oven until golden brown on top, about 30 minutes.

Made this for Thanksgiving and it was a hit. I’m not a stuffing fan but this was delish!! I used smoked oysters and chopped the onion instead of sliced. This is a keeper for next year!!

This year I was in charge of the Oyster Stuffing. My mother in law usually makes it, so I was a little nervous. Let me tell you that this recipe is PHENOMENAL! I made exactly according to the instructions, but I actually used a little bit more bacon and oysters. I will definitely be making again.

Excellent! I made it exactly as stated, except (of course) I put the bacon in at the same time I added the mushrooms and onions. It was the most popular dish at the feast, and I’ll definitely put this on our Thanksgiving tradition list.
