- 1 pound salmon fillet, skin on
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup passion fruit juice
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1/4 cup chopped cilantro
Instructions:
- Preheat your oven to 400 degrees Fahrenheit.
- Pat the salmon fillet dry with paper towels.
- Heat the olive oil in a large skillet over medium heat.
- Season the salmon fillet with salt and pepper.
- Cook the salmon fillet for 3-4 minutes per side, or until cooked through.
- Transfer the salmon fillet to a baking sheet and bake for 10 minutes, or until heated through.
- While the salmon is baking, make the passion fruit dressing. In a small bowl, whisk together the passion fruit juice, lime juice, honey, and cilantro.
- Serve the salmon fillet with the passion fruit dressing.
Tips:
- You can use any type of salmon that you like. I used wild-caught salmon, but you could also use farmed salmon.
- If you don’t have passion fruit juice, you can substitute orange juice or pineapple juice.
- You can adjust the amount of honey to your liking. If you like your dressing more sweet, you can add more honey.
- You can also add other herbs and spices to the dressing, such as mint or basil.
