These cakes were baked for years by my mother and grandma. Despite not having eggs, they are moist. The key component is applesauce. Years ago, I sold these at bake sales, and we had many repeat customers who came back only to acquire one.

Ingredients

  1. ½ cup yogurt
  2. ½ cup pineapple tidbits in pineapple juice, undrained
  3. ½ cup raisins
  4. ½ cup coconut
  5. 2 tablespoons honey, or to taste
  6. 4 cups spiral-sliced carrots

Instructions

  1. Stir yogurt, pineapple, raisins, coconut, and honey together in a bowl; add carrots. Stir until ingredients are thoroughly combined. Refrigerate until chilled, about 30 minutes. Stir again before serving.
  2. Use a spiralizer or vegetable peeler to cut carrots into noodle shapes.

Yes. Modified by adding silvered almonds, & using Stevie instead of honey to keep sugars lower. Wonderful
