Ingredients

  1. 1 (16 ounce) package frozen peas, thawed
  2. 1 onion, finely chopped
  3. 2 hard-cooked eggs, chopped
  4. ½ cup mayonnaise
  5. salt and ground black pepper to taste

Instructions

  1. Combine peas, onion, hard-cooked eggs, and mayonnaise in a large bowl. Stir well to combine. Season with salt and pepper. Chill for one hour before serving.

  3. If you like a creamier salad, add more mayonnaise to taste.

It’s so frustrating to have to scroll down and down and down to get to the recipe. Sometimes I’m in a hurry and can’t take time to read the mile long story of how they got the recipe and blah blah. I have been trying to find a recipe for pea salad my friends mother makes. This is incredibly close, and just “down-home” delicious all the same. It is usually the first bowl empty at the bbq! In my family that’s bragging rights for sure.

this is very good as is. i added hard boiled eggs (2) and 2 T. of balsamic vinegar. very nice and fresh tasting for the summer.

This is similar to my recipe, but a little bland. I also add some shredded cheddar cheese to mine, and also add a little sugar and apple cider vinegar to the mayonnaise.
