Ingredients

  1. 2 pounds fresh green beans, trimmed
  2. ½ cup balsamic vinegar
  3. ⅓ cup extra-virgin olive oil
  4. 1 small sweet onion, thinly sliced
  5. 1 clove garlic, minced
  6. 2 teaspoons chopped fresh parsley
  7. 1 teaspoon white sugar
  8. 1 teaspoon salt
  9. freshly ground black pepper to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil over high heat. Add green beans and cook, uncovered, until soft but still firm to the bite, 7 to 10 minutes. Check often so beans don’t overcook.
  2. Meanwhile, whisk vinegar, olive oil, onion, garlic, parsley, sugar, salt, and pepper together in a large bowl.
  3. Drain green beans and mix with dressing while still warm. Allow to marinate at room temperature for at least 1 hour. Serve at room temperature or chilled.

Good but , as other reviewer mentioned, because the beans are not rinsed in cold water after cooking they turn dark once marinated. Not very appetizing looking. Since balsamic is quite flavourful I found 3/4 cup was way too much, nor is so much EVOO needed, lots of dressing left over in bottom of bowl when salad was finished. Will make again but rinse beans in cold water after cooking and reduce quantities of balsamic and oil.

I’m confused. Using balsamic vinegar, you end up with a rather dark dressing that does color the beans. In the picture with this recipe, I am wondering if the writer actually used balsamic vinegar. My beans were all quite dark with the dressing. Tasted good, but really wondering about this.

I was looking for a recipe that would use up some fresh garden beans and this one was excellent! It tastes better after being in the refrig for a few hours. Also tastes good with feta cheese and almonds added.

Loved this! So simple yet very flavorful. Because the beans do not get rinsed under cold water, they continue to cook. I recommend removing them from the heat right at the 7 minute mark. I did leave out the sugar due to personal taste but that was the only change I made. Excellent recipe!
