Easy Ramen with Chicken and Teriyaki Sauce

This simple side dish is simply red potatoes cooked until crisp and golden in oil and ranch seasoning.

Ingredients

  1. 2 (3 ounce) packages ramen noodles (flavor packets discarded)
  2. 1 tablespoon butter
  3. 2 medium carrots, peeled and thinly sliced
  4. 1 medium zucchini, chopped
  5. 1 medium onion, chopped
  6. 2 cups cooked, shredded chicken breast meat
  7. 1 tablespoon teriyaki sauce, or more to taste
  8. salt and ground black pepper to taste

Instructions

  1. Add 4 cups water to a skillet and bring to a boil. Add ramen and cook until soft, about 5 minutes.
  2. Meanwhile, melt butter in another skillet over medium heat. Add carrots, zucchini, and onion and saute until vegetables have softened, about 5 minutes. Add shredded chicken, teriyaki sauce, salt, and pepper and cook until heated through and sauce has thickened, 3 to 5 minutes.
  3. Drain ramen and add to the vegetable and chicken mixture. Toss and add more teriyaki as needed.
  4. This is very versatile — try it with beef, pork, or tofu in place of chicken, or just have the veggies.

I made this recipe and my partner, our roommate and myself were all very impressed. Both are picky in their own ways so to find a recipe that everyone gave 5 stars was great. I will definitely make this again and again and try switching out the protein and veggies to make it different!!!

This was delicious!!!! And it’s pretty easy. Doubled, added some minced garlic during the last two minutes of the veggie sauté and then tripled the Teriyaki sauce (4 TBLS). A wonderful, quick lunch! Used rotisserie chicken which made this even easier. While I liked the taste/texture as written, I could see this being versatile to include or substituted with various bell peppers, sprouts, mushrooms, etc. May also consider adding a couple scrambled eggs. We loved it and would absolutely make again! Thanks for sharing this great recipe!
