A satisfying vegetarian lunch that was well worth the effort to prepare!

Ingredients

  1. 2 slices whole wheat bread
  2. 1 tablespoon cream cheese
  3. 1 tablespoon creamy goat cheese (Optional)
  4. 2 slices smoked salmon
  5. 1 teaspoon olive oil
  6. ½ teaspoon dried dill, or to taste
  7. ground black pepper to taste
  8. ½ cup shredded lettuce

Instructions

  1. Toast bread in a toaster or toaster oven.
  2. Spread cream cheese and goat cheese on 1 slice of toast. Add smoked salmon on top. Add olive oil, dill, and black pepper. Cover with lettuce and top with the other slice of toast.

5 stars for this simple sandwich! I would not skip the goat cheese. I wouldn’t mind trying it with fresh dill, but really nothing needed to be changed.

Added capers; omitted the goat cheese. Rye instead of wheat. Delicious.
