Elegant Open-Faced Smoked Salmon Sandwiches

Even the most novice cook can make these smoked salmon sandwiches, and they are tasty and elegant enough to serve to a special someone. For a light meal that leaves plenty of room for a rich dessert, serve with a decent wine and a salad.

Yield: 4 open-faced sandwiches

Ingredients

  1. 4 slices bread
  2. 2 tablespoons salted butter, softened
  3. 1 teaspoon finely chopped scallion
  4. 1 teaspoon finely chopped fresh parsley
  5. ½ teaspoon bottled minced garlic
  6. 8 slices smoked salmon
  7. ½ cucumber, thinly sliced
  8. ½ lemon

Instructions

  1. Toast bread slices in a toaster until golden and crispy, 1 to 2 minutes.
  2. Combine butter, scallion, parsley, and garlic in a small bowl.
  3. Spread each piece of bread with 1/2 tablespoon of herbed butter mixture. Layer with 2 slices of smoked salmon, followed by cucumber. Top with a squeeze of lemon juice. Cut on an angle and serve immediately.
  4. I like to use Scali bread.

This was excellent! I had a few pieces of sourdough/rye bread and it worked great on there. My husband was still talking about these sandwiches hours afterwards. Made as written and they were perfect.
