Peanut Butter Potato Candy

You can use chopped eggs in this mashed potato salad or not. My father will only eat this kind of potato salad. Try it and you’ll understand why!

Ingredients

  1. ¼ cup mashed potatoes
  2. 2 tablespoons milk
  3. 1 teaspoon vanilla extract
  4. 1 pinch salt
  5. 1 (16 ounce) package confectioners’ sugar
  6. 1 tablespoon confectioners’ sugar for dusting, or as needed
  7. ⅓ cup peanut butter, or as needed

Instructions

  1. Combine mashed potatoes, milk, vanilla extract, and salt in a bowl.
  2. Stir confectioners’ sugar into potato mixture until a dough consistency is reached. Refrigerate dough until chilled, about 1 hour.
  3. Sprinkle confectioners’ sugar on a cutting board or waxed paper.
  4. Roll dough into a large rectangular shape on prepared surface.
  5. Spread enough peanut butter on top layer of dough to cover.
  6. Roll dough into a jelly roll shape; refrigerate roll for 1 hour. Slice dough into pinwheels to serve.

After reading the other reviews I made my changes – I used instant potatoes & used 1/2 cup in the recipe with 1 tsp of vanilla. It’s called potato candy, right? I didn’t add any milk! Mixed in almost 2 lbs of confectioner’s sugar & it came together perfectly. I spread on 1/2 a jar of natural peanut butter, then divided the dough in half. Refrigerated until firm enough to cut & it was fantastic. I’m glad I read the other reviews before I tried this!

Love this one…easy and good. Great idea for left over tatoes after Thanksgiving. Can add jelly … Choc. Chips.. cinnamon.. just. Tweek it to your taste and enjoy!!!!

Was good but had to add more powdered sugar to recipe since as written made more of a batter than dough. Kind of like fudge, you can only eat one at a time due to sweetness.

DO NOT USE THIS RECIPE. I used it to the recipe. Followed directions, it’s too much milk and vanilla. I ended up having to double my sugar. Half the milk and half the vanilla or you end up with a soup.

Grandma started me on this candy, never used a recipe. Leftover mashed potatoes , about a golf ball and a half size, few drops of vanilla then add powdered sugar to get to the consistency of pie dough. It will take a LOT of sugar. Roll it out spread a heavy layer of crunchy PB. Roll it up chill and have at it. one small piece at a time is adequate.

I learned to make this in school 40 years ago but lost the recipe. I always start with cold left over mashed potatoes. Then add your sugar. Work it util a stiff dough is formed then layer your surface with 10x sugar and roll out. To make spreading easier you can slightly warn your peanut butter by floating the jar in a bowl of warm water Not Hot. If its too warm it will squeeze out when you roll it. Speard out the PB and let it rest a 10 minutes or until the PB comes back to room temp before rolling. Chill the roll for 1 hr before slicing.

I agree with the lady who said to just get a half a boiled potato, add some vanilla and then start adding powdered sugar until the dough is of a consistency that can be rolled. Just forget the recipe! Also, you can separate the dough into sections and use food coloring to color it. Looks very nice with the peanut butter filling.!!

PLEASE READ. To all the people whining about it being “soupy” or “watery”, if you would have done enough research, some potatoes are bigger than others when you just use one potato. All you do is add more powdered sugar until it’s a form dough. That’s it. Add more sugar. I did this EXACTLY and they came out AMAZING!! Just like Granny makes. Also, the milk isn’t even needed.

My family has been making potato candy for generations. Please remember that every potato has a different amount of moisture so the amount of powdered sugar needed will vary. You will need to add powdered sugar until you get to a dough consistency. If it’s soupy you need to continue to add sugar. Sometimes if you add too much and the dough is dry, then you can add just a little bit of milk, maybe a tablespoon. I always start with one medium potato – dice it boil it and mash it. Then get started added the sugar. My family never actually wrote down a recipe. Every time we make it, the potato dictates how much sugar. Be patient. This is a delicious candy and fun to pass the technique down to the next generation.

This came out super watery, I don’t know if I missed something, but I tried every trick in the book to form a dough consistency, but I couldn’t use it in the end.
