Grilled 4 Cheese Sandwiches

Ingredients

  1. 2 tablespoons extra-virgin olive oil, 2 turns of the pan
  2. 3 tablespoons butter
  3. 1 clove garlic, cracked away from skin
  4. 8 slices crusty Italian semolina bread
  5. 1 cup shredded provolone
  6. 1 cup shredded mozzarella
  7. 1/2 cup grated Parmesan or Romano
  8. 1 cup shredded Asiago

Instructions

  1. In a small skillet over medium low heat, combine oil, butter and garlic. Cook garlic in butter and oil gently for 2 or 3 minutes. Remove garlic butter mixture from heat.
  2. Place a large nonstick skillet on the stove over medium high heat. Using a pastry brush, brush 1 side of 4 slices of bread with garlic oil and place buttered side down in skillet. Top each slice with equal amounts of the 4 cheeses, distributing them equally over the 4 slices. Top each sandwich with another slice of bread brushed with garlic butter, buttered side up. Flip the grill cheese sandwiches a few times until cheeses are melted and gooey and bread is toasty and golden. Cut grilled 4 cheese sandwiches from corner to corner and serve.

Grilled Cheese Sammies must have Mayo or Miracle Whip on them, Period, with a good American Cheese. I have been making them for decades. Made with a homemade Tomato Soup and it is always a winner combo!!!

Mix together olive oil, butter and finely minced garlic (ready to use in a jar). Let age overnight.
Use sliced cheese for the other three cheeses. Spread garlic butter on one side of each slice of bread. Then place them in a bowl, that the Parmesan has been put in, butter side down. Make sure the bread is covered on the buttered side. Place the slices in skillet with buttered side down. Place sliced cheeses on half the slices of bread. Cook until the bread slices are golden brown. Then place second slice of bread on top of the slice that has the other cheeses with buttered side up. Remove from skillet, slice and eat.
You might want to substitute Cheddar or American for the Asiago since they have a better flavor to most Americans.

I don’t regularly care for grilled cheese sandwiches. BORING!!! But this was fantastic. I used 4 cheese bread from a bakery and added feta cheese to the mix. So I had a 5 cheese sandwich. Anyone who puts down Rachel on the fact that the recipes are not healthy shouldn’t use them. If you are that health conscience than watch another show and quit knocking her recipes.
