Sweetened Condensed Milk for Snow Ice Cream

When we were snowed in and unable to travel to the store, I needed sweetened condensed milk for Snow Ice Cream. I improvised because I lacked the necessary ingredients for any of the recipes I found. We’ve never had snow ice cream quite like this!

Ingredients

  1. ½ cup milk
  2. 10 tablespoons powdered French vanilla-flavored coffee creamer
  3. ¾ cup white sugar
  4. 24 cups clean fresh snow, or as needed

Instructions

  1. Whisk the milk, powdered creamer, and sugar together in a saucepan, and place over medium heat. Bring to a boil, whisking constantly, and cook until thickened, 10 to 12 minutes. Set the mixture aside, and cool thoroughly (mixture will thicken as it cools).
  2. Place half the snow into a large mixing bowl, and pour the milk mixture over the snow. Gently stir the snow with the milk mixture until thoroughly combined. Continue to spoon in more snow, about 1 cup at a time, until the snow ice cream has the consistency of soft-serve ice cream. Serve immediately.

I have made snow ice cream with my mom’s recipe for 50 years. This recipe called for half and half and vanilla extract, plus sugar to taste. It never had any amounts of anything – you just keep adding ingredients until it is “perfect”. The deciding factor is to only use the driest, fluffiest snow you can find. Wet snow does not let the magic work!

Sometimes it just isn’t worth making and this recipe falls into that category. I found it to be sickeningly sweet. I know that I could fiddle around with the sugar and vanilla amounts, but as is I would never make this recipe again.

This was easy peasy and my kids loved it! I used skim milk powder and a tbsp of vanilla instead of the flavored powder it suggests.
