Citrus-Ginger Granita

The rinds and the entire lime are used to make these lime margaritas. Your lime margaritas will be vibrant and tasty — nothing like a bottled mix — if you choose thin-skinned limes with lots of juice! The lime rind gives lovely color as well as a burst of sour flavor that isn’t excessively sweet. You’ll never prepare a margarita in the same way once more.

Ingredients

  1. ¾ cup water
  2. ¾ cup white sugar
  3. 3 tablespoons grated fresh ginger
  4. 2 lemons, zested
  5. 2 limes, zested
  6. 5 cups orange juice

Instructions

  1. Stir water, sugar, ginger, lemon zest, and lime zest together in a saucepan over medium-high heat until sugar dissolves and mixture is bubbling, 5 to 10 minutes; cool slightly.
  2. Stir the ginger mixture an orange juice together in a pitcher; pour into a 9×13-inch baking dish.
  3. Place dish in the freezer; scrape and stir orange juice mixture with a fork once every hour until granita is evenly frozen and crystallized, about 6 hours.

Update 5/13/16: add two heaping spoonfuls of this to your iced tea!! Yum…. Excellent! Refreshing and if you cheat like I did and make this in your ice cream/sorbetto machine, then it’s also easy! If you use organic fruit, you can refill the oranges with the granita for a cute dessert cup idea. Thank you for the recipe.
