Ingredients

  1. Butter-flavored baking spray
  2. 1 (18.25-ounce) box vanilla cake mix (recommended: Betty Crocker)
  3. 1/3 cup canola oil
  4. 3 eggs
  5. 1 1/4 cups white cranberry juice
  6. 1 (3-ounce) box cool n’ serve tapioca pudding (recommended: Jell-O)
  7. 1 (14-ounce) can light coconut milk (recommended: Thai Kitchen)
  8. 1 teaspoon coconut extract
  9. 1/2 cup shredded coconut
  10. For the frosting:
  11. 3 (12-ounce) cans fluffy white frosting (recommended: Betty Crocker)
  12. 2 teaspoons coconut extract
  13. Fresh blueberries
  14. 1 1/2 cups shredded coconut
  15. 3 recipes Blueberry Sauce, recipe follows
  16. 2 cups frozen blueberries
  17. 1/3 cup blueberry vodka (recommended: Stoli)
  18. 1/4 blueberry jelly
  19. 1 tablespoon cornstarch
  20. 1/2 orange, zested

Instructions

  1. Preheat oven to 350 degrees F. Lightly spray 2 (8-inch) round baking pans with butter flavor baking spray; set aside.
  2. In a large bowl, combine cake mix, oil, eggs, and white cranberry juice. Use an electric mixer to beat cake batter on low speed for 30 seconds. Scrape down sides of bowl and beat for 2 minutes on medium speed.
  3. Divide batter evenly into prepared pans. Bake in preheated oven for 32 to 35 minutes, or until tester comes away clean.
  4. Meanwhile, make cake pudding filling: combine pudding mix, coconut milk, 1 teaspoon coconut extract, and 1/2 cup shredded coconut in a medium saucepan.
  5. Bring to a boil over medium heat, stirring constantly. Remove from heat and let cool.
  6. In a small bowl, mix together frosting and 2 teaspoons of coconut extract; set aside.
  7. For assembly:
  8. With a serrated knife, cut cake layers in half horizontally; set aside.
  9. Fill pastry bag or zip-top bag with a third of the frosting; set aside.
  10. Place 1/2 of a cake layer on serving plate and pipe a ring of frosting around top edge. Fill middle of ring with 1/3 of pudding. Repeat with 2 more layers. Place final cake layer on top. Frost outside of cake with remaining frosting.
  11. Top frosted cake with blueberries and shredded coconut and serve with Blueberry Sauce.
  12. Combine all ingredients in saucepan.
  13. Cook and stir over medium heat for 3 to 6 minutes or until jelly is dissolved and sauce has thickened.

Yuck. This was really just too artificial, sickeningly sweet and we ended up throwing most of it away- even my kids wouldn’t eat it and generally speaking we love tapioca, blueberries and coconut. And, with just a little experience a from scratch cake and icing is about as easy and will taste 100% better.

We loved this cake!!! I couldn’t find the WHITE cranberry juice so just used regular cranberry juice; other than that, the recipe was absolutely perfect as is and was soooooooooo easy!! I AM VERY PICKY ABOUT CAKES AND I WANT YOU ALL TO KNOW THAT IF THIS CAKE IS MADE TO THE LETTER IT WILL TASTE LIKE AN EXSPESIVE PROFESSIONAL DESIGHNER CAKE. THE DIFFERENT FLAVORS THAT I EXPERIENCED WERE WONDERFUL. IT IS VERY LIGHT AND SMOOTH AS A FEATHER BUT VERY MOIST ALSO. I CAN,T EXPLAIN WHY BUT I CAN TELL YOU THAT IF I EVER NEED TO MAKE A DESSERT OF IMPORTANCE THIS WILL BE THE ONE. I OWN A BED AND BREAFAST AND I HAVE HIGH STANDARDS IN FOOD THAT I SERVE AND I WILL TELL YOU THIS IS ON MY LIST TO SERVE.

In making this for July 4th, especially since this is airing on the 1st, Could you use regular cranberry juice to make the cake reddish color and maybe color the coconut red to give the outside that red, white and blue holidayscape!

Are we so unaware and naive that no one seems to notice how absolutely artificial this cake is?! Between just the Betty Crocker cake mix and frosting there are already loads of artificial additives (hey, read the label),
and the rest of the cake is filled with fat, starch, empty calories and minus nutrition.

Along with the rest of the ingredients this cake is the
perfect choice for someone who cares absolutely nothing about health, teeth, diabetes, obesity and the health of his friends and family.

This cake was excellent, I made it for my family last night. I would agree it is sweet, but isn’t dessert suppose to be? I will deffinately make this cake again! I didn’t think the cake was hard to make, maybe try the martini before trying to make the cake. I found it to be a lot of fun that way. The coconut and blueberry is a great combination. The only thing I would do different next time is only use 2 cans of frosting. I had alot of frosting left over. What a sweet ending to a lovely summer evening.

I wanted to make this for a friend?s 4th of July party, I went to the party empty handed. The whole cake got dumped into the trash. The blueberry sauce was so bad. I tried to add sugar to help it along. The blueberry jelly does not have enough sugar to offset 2 cups of blueberries & blueberry vodka. All you could taste in the sauce was cornstarch. The tapioca pudding & frosting was overwhelming with coconut. I will admit the box cake was delicious and moist with the white cranberry juice. The whole thing was a waste of money!

This was a good simple cake to make. Apparently, most of you who complained about the complications of baking this cake, can’t bake or cook in the first place. Follow instructions, how easy is that? I think most of you who have problems just don’t like Sandra and need something to complain about.

I think it must have been my less than dazzeling “tablescape” (even spell check does not like that word), but we weren’t impressed with this one. It was too sweet, and there were too many steps for something that was not all that good anyway. Won’t make it again. The only good thing was the sauce which is great on pancakes.
