Taco Dip Casserole

I’ll never prepare tacos once more! This dish, which is a variation on walking tacos, makes taco assembly less stressful. Delicious and quite simple. Serve with sour cream and little tortilla chips.

Ingredients

  1. cooking spray
  2. 1 pound ground beef
  3. ¾ cup water
  4. 1 (1.25 ounce) package taco seasoning mix
  5. 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  6. 2 tablespoons taco sauce, or to taste
  7. 1 (16 ounce) can refried beans, warmed
  8. 1 (8 ounce) container sour cream

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray an 8- or 9-inch square pan with cooking spray.
  2. Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in water and taco seasoning mix and bring to a boil. Reduce heat and simmer, stirring occasionally, for 5 minutes.
  3. Transfer ground beef to the prepared pan. Layer with diced tomatoes and green chiles, taco sauce, warm refried beans, sour cream, and Mexican cheese.
  4. Cook, uncovered, in the preheated oven for 20 minutes. Let sit for 10 minutes before serving.

Very simple and delicious. I also make this in the crockpot on days when it’s too hot to bake. I serve it on tortilla chips, along with other toppings as desired.
