Spicy Bacon Cheeseburger Dip

This filling and simple to prepare dip has the flavors of a bacon cheeseburger and serves a large group. If the dip gets too thick, thin it out with a little milk until you have the proper consistency. Serve heated with corn chip scoops, tortilla chips, or bagels as chips.

Ingredients

  1. 8 slices bacon
  2. 1 pound lean ground beef
  3. 2 tablespoons dill pickle juice
  4. 1 pinch salt and ground black pepper to taste
  5. 1 (16 ounce) package processed American cheese, cut into cubes
  6. 8 ounces cream cheese
  7. 1 cup shredded part-skim mozzarella cheese
  8. 1 (10 ounce) can diced tomatoes with green chile peppers
  9. 6 green onions, thinly sliced
  10. 1 tablespoon ketchup
  11. 1 tablespoon Dijon mustard
  12. ¼ teaspoon cayenne pepper (Optional)

Instructions

  1. Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon to a plate lined with a paper towel, retaining drippings in the skillet.
  2. Break ground beef in pieces and add to drippings in the skillet. Cook and stir beef until completely browned, 7 to 10 minutes; drain in a colander. Rinse beef with water to wash away excess fat; drain. Transfer drained beef to a bowl. Stir pickle juice into the beef; season with salt and pepper.
  3. Combine ground beef mixture, American cheese, cream cheese, diced tomatoes with green chile peppers, green onions, ketchup, Dijon mustard, and cayenne pepper in a slow cooker.
  4. Cook cheese mixture on Low, stirring occasionally, until the cheese is melted completely, about 1 hour. Crumble bacon over the surface of the dip to serve.

This was hit for the Sunday football! I agreed with another reviewer who added more pickle juice; I used 5 TBLS vs 2 and glad I did. Really helped be more reminiscent of a cheeseburger! Did not think this was spicy at all. If I’m looking for heat, next time may increase the cayenne or add another 4oz can of green chiles. Next time, might also chop some pickles add add them in there both for flavor and texture. Winning recipe and will make again! Super Bowl! Thanks for posting brightlightz!!

Made as written except that I left out the salt. The American cheese is plenty salty enough. I also didn’t place the beef in a bowl after it was drained but stuck in right in the slow cooker because I didn’t see the need to dirty up another bowl. I loved the idea of pickle juice but you really need to add more than 2 tablespoons if you want to taste it. This is a good dip and one that can easily be tweaked to your individual tastes. I’m confident this one would be a huge hit at any football party.

Turn out Great, served at a party and there was none left. Will be using this recipe for a Bacon contest…However I will use scallions or white onions for more seasoning. I also added about 1/2 cup of chicken broth to make it creamier…Yummy
