Ingredients

  1. 1 (14 ounce) can artichoke hearts, drained and chopped
  2. 1 cup mayonnaise
  3. 1 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Mix artichoke hearts, mayonnaise, and Parmesan cheese together in a bowl until well combined. Spread mixture in a 9×13-inch baking dish.
  3. Bake in the preheated oven until bubbly and golden brown, about 15 to 20 minutes.

I haven’t made this version. People who want to freeze any leftovers may want to add cream cheese or neufchatel and half the mayonnaise. It tends to separate when freezing, whereas cream cheese doesn’t! Also this dip screams,cries, begs for garlic! You can use garlic powder or fresh minced . To make this quickly, put all ingredients in a blender (EXCEPT the artichoke hearts!!) Cream cheese should be room temp and cut into pieces. Hellmans is the best mayonnaise so don’t skimp, just buy a small jar or squeeze bottle. Blend well and place in a baking dish then add the peeled apart artichoke hearts folding into the mixture. I peel the hearts to distribute them throughout the dip. Cutting them into pieces results in you ” hunting” for the artichokes and just getting dip! Yes, you can add spinach, but for a different green and texture I used romaine lettuce. Next time I plan to try escarole. Both have zero bitter unlike spinach and are just as healthy if not more! Hope you like my versions and feel free to leave polite comments after you try. I didnt provide measurements as the recipe already has them. I assume this recipe can serve 2-3 people so increase amounts based on number of people.

This is a delicious recipe and very easy. It is always a request from my family. I double the recipe and use bagged or fresh parmesan cheese. You can do it with shake cheese but it’s much better with fresh cheese. Serve hot as you can and with pita chips, wheat thins and what ever else you may like.

Awesome dip! I always make this on Thanksgiving and my sister makes this on Christmas Eve. Sooo good! I love this dip! Any type of cracker goes well with this. I usually remove any hard pieces of the artichoke before chopping. So easy and so good.

This is a bland version of what should be a very tasty dip. Just add 1 package of shredded mozzarella (2 cups) and 2 teaspoons garlic powder to this recipe and you’ll have creamy, garlicky perfection.
