A wonderful chicken fried rice dish made in the tradition of Thailand. Easy and straightforward with delicious cilantro and garlic tastes. Serve with lime wedges and fresh cucumber slices, garnished with cilantro and hot fish sauce.

Ingredients

  1. 2 pounds shredded Cheddar cheese
  2. 1 (16 ounce) container sour cream
  3. 3 tomatoes, diced
  4. ½ cup mayonnaise
  5. 1 (4 ounce) can diced jalapeno peppers
  6. 1 pound ground hot Italian sausage
  7. 1 lime, juiced
  8. 1 (1 ounce) package taco seasoning

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Combine Cheddar cheese, sour cream, tomatoes, mayonnaise, and jalapeno peppers in a medium bowl and mix until well blended. Pour into an 8×8-inch baking dish.
  3. Bake in the preheated oven until melted, about 30 minutes.
  4. Meanwhile, cook and stir sausage in a hot skillet until browned and crumbly, 5 to 7 minutes. Drain excess grease.
  5. Mix cooked sausage, lime juice, and taco seasoning into the hot cheese mixture. Serve immediately or keep warm in a small slow cooker.
  6. Substitute 1 cup salsa for the diced tomatoes if preferred.

Wow, that is a lot of dip! 🙂 Seems like enough for a party of a couple dozen people! Changes for my house: Regular sausage instead of hot. Half the lime and half the taco seasoning.
