Sausage and Black Bean Dip

This creamy and chunky dip, which is filled with sausage, salsa, and cheese, makes a filling snack for one or a group. At your next gathering, try this dip in place of ready-made queso (or just eat it by yourself; we won’t tell).

Ingredients

  1. 2 (15 ounce) cans black beans, drained
  2. ¼ cup sour cream or plain yogurt
  3. ½ teaspoon minced garlic
  4. ¼ teaspoon salt
  5. 1 tablespoon canola or vegetable oil
  6. 1/2 (1-pound) Jimmy Dean Premium Pork Hot Sausage
  7. 2 tablespoons salsa
  8. 2 tablespoons shredded Cheddar or Mexican cheese blend
  9. 2 tablespoons sour cream
  10. 1 tablespoon roughly chopped cilantro

Instructions

  1. In a food processor, mix beans, 1/4 cup sour cream, garlic, and salt. Pulse until smooth.
  2. Heat 1 tablespoon of oil in a small frying pan over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Move the sausage to a separate pot and set aside.
  3. Add the black bean mixture to the Jimmy Dean sausage. Bring to medium heat and stir often until dip is hot, about 5 minutes.
  4. Spoon the hot dip into a bowl and top with salsa, cheese, remaining sour cream, and cilantro.
  5. Serve with chips or in a tortilla, and enjoy!
  6. Use the leftover Jimmy Dean Sausage to make sausage patties or crumbles to serve with eggs.

I choose this recipe because I had black beans in the pantry and sausage in the freezer. I followed the recipe directions exactly with no substitutions or additions. The mixture was much thicker than what was pictured and for some reason was an odd color. While I was excited to serve what was pictured it did not turn out that way.
