Guacamole 3 Ways

This is one of my favorite recipes from my bridal shower, where everyone brought a few. It is lovely and rejuvenating. Save the dressing and use it right before serving if you want to take this salad with you.

Yield: 1 1/2 cups

Ingredients

  1. 2 medium avocados – halved, pitted, and peeled
  2. 2 tablespoons fresh lime juice
  3. ¼ cup chopped orange
  4. ¼ cup chopped fresh cilantro
  5. ¼ cup crumbled cotija cheese
  6. 1 tablespoon finely chopped jalapeno
  7. ½ teaspoon salt

Instructions

  1. Mash together avocados and lime juice in a bowl. Stir in orange, cilantro, cotija cheese, jalapeno, and salt.
  2. For Mediterranean Guacamole, use pomegranate seeds, parsley, feta cheese, and red onion.
  3. For Cheesy Corn Guacamole, use roasted corn, green onion, goat cheese, and serrano pepper.
