Cubed pork is simmered in a flavorful concoction of chicken broth, sherry, soy sauce, ginger, and other seasonings in this tender and delectable meal.

Ingredients

  1. 1 tablespoon olive oil
  2. ¼ cup chopped red onion
  3. 1 jalapeno, seeded and chopped
  4. 1 clove garlic, minced
  5. 1 teaspoon cumin
  6. 1 teaspoon chili powder
  7. 1 teaspoon salt
  8. ½ teaspoon cayenne pepper
  9. 2 (15 ounce) cans black beans, drained and reserving 1/4 cup liquid
  10. 2 tablespoons lime juice
  11. 2 tablespoons tomato paste
  12. 1 tablespoon apple cider vinegar
  13. 1 bunch chopped fresh cilantro, or to taste

Instructions

  1. Heat oil in a skillet over medium heat. Add onion, jalapeno, and garlic. Cook until onion is soft and translucent, about 5 minutes, stirring often to prevent garlic from burning. Add cumin, chili powder, salt, and cayenne pepper and cook 5 minutes more. Remove from heat and let cool slightly.
  2. Transfer onion mixture to a blender. Add black beans, reserved 1/4 cup liquid, lime juice, tomato paste, and vinegar and blend until smooth. Transfer to a serving bowl and garnish with cilantro.

Great dip! Used a whole medium onion and removed the salt, jalapeno and cayenne pepper entirely (family doesn’t like “hot” foods but loves the flavors of the southwest. Reserving the liquid to the end allows you to make the dip as thick or thin as you like. Fair warning, this does cause gas!

This beats any store bought dip by a mile. left out jalapeño and used catsup as substitute for paste. Easy to make!

Simple. Easy. And delicious. I didn’t have any jalapenos, but did saute some red pepper along with the onion. This is a great snack with tortilla chips.

This dip is excellent! I thought it was too salty (and I’m a total salt lover!), so the next time I make it I will probably scale the salt back from 1 tsp. to 1/2 tsp. Other than that, excellent, excellent black bean dip. Way better than anything you can buy at the market.
