Cobb Salad and Bacon Buttermilk Dressing

Ingredients

  1. 2 hearts romaine lettuce, chopped
  2. 1 red bell pepper, seeded and thinly sliced
  3. 1 English seedless cucumber, quartered and sliced
  4. 1 small red onion, diced
  5. 1 tomato, cored and cut into wedges
  6. 2 avocados, peeled and diced
  7. 2 cups small cubes sharp white Cheddar
  8. 6 hard-boiled eggs, chopped
  9. Bacon Buttermilk Dressing, recipe follows
  10. 1/2 cup buttermilk
  11. 1/3 cup sour cream
  12. 1 tablespoon lemon juice
  13. 2 teaspoons Dijon mustard
  14. 1/2 teaspoon chili powder
  15. 1/2 teaspoon salt
  16. 1/2 teaspoon ground black pepper
  17. 4 slices bacon, cooked until crisp and roughly chopped or torn

Instructions

  1. Arrange the lettuce on a platter, then top with rows of the peppers, cucumbers, onions, tomatoes, avocados, cheese and eggs. Drizzle the Bacon Buttermilk Dressing over the top and serve.
  2. Place the buttermilk, sour cream, lemon juice, mustard, chili powder, salt, pepper and bacon in a food processor and process until combined. Chill until ready to serve.

Oh. My. Goodness. This salad was so good. BUT…. the homemade bacon buttermilk dressing is absolutely out of this world delicious! Sooooo good!

This dressing is delicious!  A perfect compliment to the salad.  I will be making this from now on.

The salad was great, omitted the red onion and added chopped bacon. Used blue cheese instead of cheddar. The dressing was really thin and did not have a lot of flavor, so I added 1/4 mayo and 1/4 cup grated pecorino romano cheese to the dressing.
