Ingredients

  1. cooking spray (such as Pam®)
  2. 3 cups bite-sized cauliflower florets
  3. 1 egg
  4. ½ tablespoon all-purpose flour
  5. ½ cup milk
  6. salt and ground black pepper to taste
  7. 2 cups shredded sharp Cheddar cheese
  8. 1 pinch ground paprika (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  2. Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
  3. Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
  4. Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.
  5. If you have time, cover the baking dish with plastic wrap and refrigerate cauliflower mixture until set, about 1 hour, before baking.

Delicious I added green chili for some spice.

It was pretty good. I used 2 eggs and did let it sit in the fridge. I topped it with a few panko crumbs. I’m not a cauliflower fan so I loved the cheese part. My family liked it
