With few ingredients, this carrot salad may be prepared quickly and easily. I loved it every time my granny prepared it. Now when I cook it in her honor, it’s nearly as good.

Ingredients
- 1 pound shredded carrots
- 1 ¼ cups raisins
- 2 to 3 tablespoons mayonnaise, or to taste
- 1 teaspoon lemon juice
- ¼ teaspoon salt
Instructions
- Mix shredded carrots and raisins together in a large serving bowl.
- Whisk mayonnaise, lemon juice, and salt in a small bowl until smooth. Pour over carrot mixture; stir until carrots and raisins are completely coated. Refrigerate until chilled, at least 30 minutes.

I loved this stuff as a kid but never made it myself. Oh My Gosh I forgot how good it is, a perfect blend of flavors and so easy to make. This will become a regular at our house!

Is a good receipe. I usually use a bit of sugar and diced apples in place of pineapple. Use mayo to suit taste.
This is good, but, much better with crushed pineapple! So good!
I doubled the mayonnaise, lemon and raisins. The recipe did say “to taste”, right? 🙂 Perfect for a large family gathering!

Never used the lemon juice in it, but made it all the time before I got married. . . My husband will walk a mile around a table to avoid a raisin. This was one of my grandma’s and mom’s favorites. And, don’t forget to take it to the potluck at church!
Fine for what it is, basic carrot and raisin salad. White wine vinegar makes a nice replacement for lemon juice. I would recommend the ingredient list specify which type of salt, i.e. kosher, table, etc.
The flavors compliment each other and it is easy to make.
Next time I will double the dressing and add raisins by “look” rather than by measurement.
The mayonnaise, lemon juice and salt are a great combo. I made a single batch and used about two tablespoons of mayonnaise for that. It does say “or to taste”. I recommend adding as much mayo and lemon juice as you prefer and taste it prior to adding to the carrot mixture. The dressing also goes very well on shredded cabbage.
This is the recipe that my grandma always used, with a couple of changes. I added a lot more mayo because it was too dry (there’s no way that 2T would make the picture look like it does, I think it’s a typo). I added about 1T of cinnamon sugar It’s really good with a little coconut
I used chunk pineapple and put some of the juice in the dressing. Also added more coconut. This salad disappears fast at our house!
I soaked my raisins in Lemon Juice and Water to plump them and used Mayo AND Miracle Whip to add sweetness. I also used a little dijon mustard to give it a kick.

I did not have enough raisins, so I added some dried cranberries to make up the difference. Also added more mayo than called for; I like carrot salad on the creamy side. And for good measure, I added a squeeze of honey for a bit more sweetness. Love the salad.
It was pretty good. I used organic rainbow carrots, dried cranberries and the dressing as per the recipe. Although I think I’ll add just a pinch of sugar in the dressing next time.

This is my go to recipe for carrot salad. Depending on my mood I prepare it as written or jazz it up by adding additional ingredients like hulled sunflower seeds, pineapple, diced apple, or coconut. Have never measured the mayo…but…Suspect that my tastes call for well over 2 tablespoons.
The lady at the deli counter LIED when she said this salad was difficult to make. Simple and delicious. Best when it gets a chance to it a few hours, so the raisins can absorb some of the juicy goodness. DEFINITELY will make this again!
