Nani’s Mashed Potato Casserole

My former wife’s mother gave me the recipe for this fast mashed potato casserole. Everyone begs her to bring this to potlucks and family dinners. She frequently just gives them the recipe because it is so easy. There are never any leftovers with this dish, which is the sole drawback.

Ingredients

  1. 2 cups water
  2. ¼ cup butter
  3. 2 teaspoons instant minced onion
  4. 2 teaspoons dried parsley
  5. 1 teaspoon salt
  6. ⅛ teaspoon ground thyme
  7. 1 cup milk
  8. 3 cups instant mashed potato flakes
  9. ¾ cup sour cream
  10. ½ cup shredded Cheddar cheese, or to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Stir water, butter, minced onion, parsley, salt, and thyme together in a saucepan; bring to a boil. Remove from heat and stir in milk. Mix in potato flakes; add sour cream and beat until fluffy. Pour potato mixture into a casserole dish and sprinkle Cheddar cheese over the top.
  3. Bake until cheese is melted and bubbling, 15 to 20 minutes.
  4. You can use as much or as little cheese as you like, but we like to cover the entire thing with a hearty layer of cheese.

The flavor of the potatoes was really great. It was super quick and easy to make. We like the crispy topping so I replaced some of the cheese with a combination of sharp cheddar and bread crumbs topping and turned the oven up to 425 for about 10 minutes to get it nice and crispy

I made this because it was easy and something other than plain mashed potatoes. Holy cow, it was REALLY yummy!! I followed the measurements exactly and had to add more milk because it was too dry. I think it depends on the brand of instant potatoes, so if you think it’s mixing up too dry, just add more milk. My husband and 3 boys also liked it!

I needed something quick to take to a funeral. I had everything on hand & so easy & quick to put together. I did add crushed potato chips on the top, then sprinkled some cheese on top of that. I thought it might need a little texture . They were gone fast. Thank you for sharing. I personall perfer a recipe I have with fresh potatoes but the difference is not worth the time involved.

This is a really good side dish recipe. My family liked it a lot. It was quick, easy, and all the ingredients are readily available in our pantry. I wished I would have boiled the herbs a bit longer to soften the thyme a little more. But you’re right Captain, there were no leftovers. Served 6-8 people.
