Grilled Sweet Potatoes with Apples

Ingredients

  1. 2 large sweet potatoes, sliced
  2. 1 apple – peeled, cored and thinly sliced
  3. ground cinnamon to taste
  4. white sugar to taste
  5. ½ cup butter

Instructions

  1. Preheat an outdoor grill.
  2. In a bowl, toss the sweet potato and apple slices with the cinnamon and sugar. Divide the mixture into 4 portions, places each on a large piece of aluminum foil. Top each with an equal amount of butter. Tightly seal foil around each portion.
  3. Place foil packets on the grill, and cook 40 minutes, turning every 5 to 10 minutes, until potatoes and apples are tender.

I followed the recipe except for using Stevia instead of sugar. It is absolutely delicious, but it seems to be more suited to Fall/Winter than summer. It would make a perfect Thanksgiving side dish.

Yum! I used one small sweet potato and one medium apple, 1/2 tbsp of margarine and a generous sprinkling of cinnamon. No sugar. I put it in a covered saucepan on medium/medium low heat until the sweet potato was tender, stirring occasionally. I ate it all for breakfast.

I cooked this recipe in the oven covered with Alu foil for 1hr… the apple became so soft that I had to take them out to serve.. also I found that there was no real ‘plus’ from the apple .. better simply cook the potatoes with butter and brown sugar like I used to ..

Really tasty! Did it in a couple of casserole dishes in the oven using the directions from previous reviewers. Cooked it a little longer (probably around 50 minutes). Used brown sugar and also added cranberries. Everyone seemed to like it for Xmas eve dinner.

Delicious side dish and easy to put together. I had some sweet potatoes and apples I wanted to use up without having to heat up the house. Made exactly as written and the potatoes and apples were cooked perfectly. The only change I’d make is to use brown sugar instead of white next time. Served with a smoked pork tenderloin. This recipe will be a repeat at home and on cabin/camping trips! Thanks for the recipe!

AWESOMENESS!!!! Kids that typically don’t eat sweet potatoes-loved this…and so did I. I typically don’t do reviews, but this one deserves a review. Followed recipe (except brown sugar)here are my portions-used 2 small Granny Smith apples and 2T.brown sugar and about 1T of the cinnamon. Loved this..will definitely be making again to change up this previously only white potato family. Thanks for sharing!!!!!

My husband raved about this recipe. I did not change anything; tasted great. It will certainly be a regular on our grill list. If I’m feeling adventurous, I might try brown sugar as other reviewers have. I would rather try and review a recipe as written before I make changes.

Pretty good base recipe, I turned the foils into “pockets”- using two equal sized pieces of foil, and rolling together all sides of each pocket, could also be used over a fire for camping food. Next time I will not use white sugar, but throw in a hefty portion of brown sugar, and cinnamon. Add a few marshmallows and you have a campfire/ grillout sweet potato casserole.

It was awesome, everyone loved it (except for my picky brother who wouldn’t try it because he doesn’t like sweet potatoes for some odd reason), and we don’t have a grill. Also, it’s winter so even if we did, it would be too cold out. We set the sweet potatoes and apples in a frying pan on top of the stove, covered them up with foil (so they would hopefully cook faster), and everything else we did the same! This turned out delicious, thank you for the recipe! :D!

I have made these on the grill and baked in the oven, everyone loves them. Because we have a diabetic in the family, we leave out the sugar and used organic coconut oil instead of butter sooo good and still so sweet 🙂

I made this today with my grilled steaks for lunch. The recipe is kind of open ended, so it’s hard to rate on the seasonings. After reading a couple reviews, I went with 1/2 tsp. cinnamon and I eyeballed the brown sugar. I used 2 tablespoons of butter in each pack and split the potatoes into 3 packets. I use 1 large Macintosh Apple and wished I had used 2. I started the packets in the oven because the grill was pretty full and only had the packets on the grill for about 10 minutes as the steaks came off. Overall a very nice change from the usual grill vegetables and very tasty. Thanks for the idea! Next time I want to grill longer to caramelize the sugar a bit more.
