Garlic Red Potatoes

The Northeast of Brazil is where this fish stew, or moqueca, first appeared in traditional Brazilian cuisine. Its unique flavor comes from the palm oil. With white rice or coconut rice, serve hot.

Ingredients

  1. 2 pounds red potatoes, quartered
  2. ¼ cup butter, melted
  3. 2 teaspoons minced garlic
  4. 1 teaspoon salt
  5. 1 lemon, juiced
  6. 1 tablespoon grated Parmesan cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place potatoes in an 8×8-inch baking dish.
  3. Combine melted butter, garlic, salt, and lemon juice in a small bowl; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
  4. Bake, covered, in the preheated oven for 30 minutes. Uncover and bake until golden brown and tender when pierced with a fork, about 10 minutes more.

Tasty but the temperature was way too low & time too short. Had to raise to 400 deg for 50 min half way thru the bake for tender potatoes.

I liked the recipe, but I always add my own touch to any recipe. I added, chopped green onion, chopped white onion, paprika, olive oil, dried parsley flakes and Tony Chachere’s seasoning, minced garlic and garlic powder. I shook up everything in a zip bag so all the potatoes are evenly coated. They were delicious and everyone loved them! Will try to attach the pic. I omitted the lemon juice and parmesan cheese. I cooked them in the oven for 50 minutes at 350 degrees.

Like many reviews the cook time was too low. I ended up putting them back in the oven for at least another 45 minutes. I may follow some of the others advice to cook in the microwave at first.

I used russet potatoes since that’s what I had in the pantry. I think a little more cheese is always better.

It tastes great, but like a lot of people have said in the comments it takes much longer to cook than the recipe states if you’re using normal red potatoes. Either use the small tiny red potatoes, or at least double the cooking time.

Really tasty potatoes to go with any meat. Cooking time is off – cut potatoes need at least an hour.

These are awesome. The lemon juice really amps up the flavor. I left out the parmesan cheese, don’t care for it, and it was wonderful. Also made again with added quartered onions and chunks of carrots. Highly recommend!

I liked the flavor it was pretty tasty but I found it took way longer to cook the potatoes than the recipe said. Next time I’m going to try cutting them into smaller pieces. Other than that this was a simple and yummy side dish it went great with our steak and mushroom dinner.
