This is a coconut oil-based sugar cookie recipe variation. They have a shortbread-like flavor and are equally as wonderful and moist. For a festive treat, roll cookie tops in sugar or colored sugar before baking. Also effective is cinnamon sugar.

Ingredients
- 1 (1 ounce) packet instant grits (such as Quaker®)
- ½ cup boiling water
- 1 teaspoon wasabi sauce (such as S&B® Wasabi)
- salt and ground black pepper to taste
Instructions
- Mix grits and boiling water together in a bowl; stir in wasabi sauce, salt, and pepper.
- For creamier grits, substitute milk for water. For spicier grits, simply add a little more wasabi.

I don’t care for grits but made these for my husband and he gave me the thumbs up. I didn’t see the cook’s notes until after the fact but I will use milk next time for a creamier consistency. According to the husband, wasabi was a great addition to grits.
