Orzo with Parmesan and Basil

Confectioners’ sugar, egg whites, and finely ground almonds are used to make macarons. The best soft cookies ever, they have crispy edges. I wanted to impart the technique that I had finally mastered. Place one cookie between two others, then pipe your preferred filling or icing on top.

Ingredients

  1. 2 tablespoons butter
  2. 1 cup uncooked orzo pasta
  3. 1 (14.5 ounce) can chicken broth
  4. ½ cup grated Parmesan cheese
  5. ¼ cup chopped fresh basil
  6. salt and pepper to taste
  7. 2 tablespoons chopped fresh basil

Instructions

  1. Melt butter in a heavy skillet over medium-high heat. Stir in orzo and sauté until lightly browned.
  2. Stir in chicken broth and bring to boil. Cover, reduce heat, and simmer until orzo is tender and liquid is absorbed, 15 to 20 minutes.
  3. Mix in Parmesan cheese and 1/4 cup chopped basil. Season with salt and pepper. Transfer to a shallow bowl and garnish with remaining basil.

Just reading the recipe I could see it was going to be very bland. I added some roasted cherry tomatoes I had in the fridge, a lot more basil during the cooking, and some red pepper flakes. Was OK, but needed a lot more seasoning. If I make it again, I’ll reduce the broth and use some white wine.

So good! I used a few tablespoons of pesto instead of basil, as another reviewer suggested, and it was amazing. Also stirred in a big bunch of chopped spinach for some color since I didn’t use the basil.

The recipe was tasty but I always use 3 cups of liquid to 1 cup of orzo. I added enough water to the l4.5 ounces of broth to make 3 cups and it turned out delicious.

After I browned the rice I added a 1/2 teaspoon of garlic before slowly adding 2 cups of broth. I did not have fresh herbs so I added dried basil when I added the broth.

Following advice from some of the previous reviewers, I added a bit of olive oil to make it not stick, which it didn’t. I also added extra basil and some chopped sundried tomatoes for extra flavour which I think it needed. This is not an overly flavourful dish, but I did enjoy it.

Orzo is one of those items always in my pantry, but rarely used. Running low on groceries, I was looking for something to go with my blackened fish and stumbled on this gem! Followed the recipe, fresh herbs DO make a difference, and for my daughter (and me) added a 1-2-3 pour of lemon juice at the end. D-lish! Such a flexible, easy recipe – thank you for sharing!

This was so good! I originally made it as a side for dinner and then I ate the rest for breakfast the following day. I did make just a few changes. As other reviews mentioned, I sautéed some mushrooms on the side with some butter and added them in with the cheese at the end. I also added a squeeze of lemon juice and garnished with chives. Like some of the other reviewers the first time I made this recipe I needed to add more chicken broth, the second time I simmered at a lower temperature and didn’t need to add more broth.

This was a great side dish for grilled meat, and a vegetable. Everyone enjoyed it. Made as written (with a little onion and garlic sautéed with the butter as suggested by reviewer…not sure it was needed though). I’ll keep this recipe.

Pretty tasty dish. I added a garlic clove and a few sliced mushrooms…otherwise followed the recipe. Means I used fresh Basil since it’s available in small plants even in late Feb. I will fix this again. I cooked some chicken thighs to add protein and will use prawns in the future.
