Leftover Prime Rib with Mushrooms and Mashed Potatoes

  4.5 – 2 reviews  • Mashed Potato Recipes

Oh my, I was sick of the opulent holiday scenario with the gravy and all. This is a quick and, more importantly, simple method to use up leftover prime rib and mashed potatoes.

Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins
Servings: 2
Yield: 2 servings

Ingredients

  1. 2 teaspoons butter
  2. 2 teaspoons water
  3. 2 tablespoons minced garlic
  4. 2 cups sliced fresh mushrooms
  5. 2 (1 inch) thick slices cooked leftover prime rib, cut into 1-inch cubes
  6. 1 ½ cups leftover mashed potatoes, or more to taste
  7. salt and ground black pepper to taste

Instructions

  1. Melt butter in large skillet over medium heat. Add water and minced garlic; stir for 1 minute. Add mushrooms, cover, and cook, stirring occasionally, until mushrooms are tender, about 5 minutes. Add prime rib and mashed potatoes and turn heat to low. Cook, stirring occasionally, until everything is heated through, 5 to 7 minutes. Season with salt and pepper.
