Ingredients

  1. 2 cups warm water
  2. ⅓ cup white sugar
  3. 2 large russet potatoes – peeled, and sliced into 1/4 inch strips
  4. 6 cups vegetable oil for frying
  5. salt to taste

Instructions

  1. Stir together warm water and sugar in a medium bowl. Soak potatoes in water mixture for 15 minutes. Remove potatoes from water and dry thoroughly on paper towels.
  2. Heat oil in a deep-fryer to 375 degrees F (190 degrees C).
  3. Cook potatoes in hot oil until golden, 5 to 6 minutes. Drain on paper towels and season with salt.
  4. We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount will vary depending on cooking time and temperature, ingredient density, and the specific type of oil used.

The recipe worked out well however I noticed that the fries were a little soggy after they sat for 5 minutes so a second dip in the oil brought them right back they were crispy on the outside and soft on the inside

To add to the ocment about frying twice, one way to prep and be ready on the day is to follow the recipe up to the first frying, then fry for around 6 or 7 minutes at 350 (note the oil temperature will plunge, so keep the burner on maximum). Then take them out and blot dry as soon as you can. Freeze. When you want to make the fries heat oil to 375 degrees, then pour in the frozen fries (they’ll bubble a lot, but you’ve already driven off most of the water, so it won’t be too bad). 6 or 7 minutes later, perfect fires. And by prepping, the final stage takes such a short time.

Been on a quest for the perfect, easily attainable home French fry recipe for so long. I have a job, I have kids, I have commitments. I followed the recipe, and cooked it the time specified. I was using my deep fryer outside, and unfortunately, it was not very well lit area. I didn’t want the fries overcooked, so brought them in after 5-1/2 minutes. They were fully cooked through, but not at all crispy. My fault for not getting a better light. I will use this recipe again, but adjust cooking time.
