a versatile vegan tahini dressing that just needs three ingredients and can be used virtually anyplace! Use it in a falafel wrap, as a salad dressing over a plain green salad, or drizzle it over roasted veggies like cauliflower or carrots.

Ingredients

  1. ¼ cup tahini
  2. 2 tablespoons lemon juice, or more to taste
  3. ¼ teaspoon salt, or to taste
  4. 2 tablespoons warm water, or as needed

Instructions

  1. Mix tahini, lemon juice, and salt in a bowl until smooth and well incorporated. Stir in warm water, 1 tablespoon at a time, to achieve a drizzling consistency. Adjust dressing with more salt or lemon juice as desired.
  2. To make a creamier dressing, you can add 1 to 2 tablespoons of vegan plant-based yogurt.
  3. Using warm water instead of cold or room temperature water ensures the dressing is easier to stir and doesn’t solidify.

To the reviewer saying this dressing needs yogurt … it’s vegan, so it will taste differently from a dressing that uses traditional yogurt. Maybe a soy yogurt would add another tangy flavor to add to the lemon…. I loved this dressing as-is. Once I had added enough water to thin it out I needed to add a bit more lemon. Next time I’ll also use lemon zest, and probably paprika.

This was okay but it needed something. I don’t know what but it needed something for sure. I made a similar recipe from this site on the same night that called for Greek yogurt and it was definitely the better of the two. I recommend adding some of that and then maybe an herb of some sort. Again, it was okay but not great.
