Molly’s Vegetarian Spaghetti Squash

One of my favorite dinner dishes is this one. Although neither my boyfriend nor I are vegetarians, we both adore it! It’s not just nutritious; it’s also tasty.

Ingredients

  1. 1 (2 pound) spaghetti squash, halved lengthwise and seeded
  2. 2 (12 ounce) packages ground beef vegetarian substitute (such as MorningStar®)
  3. 1 teaspoon Cajun seasoning, or more to taste
  4. 1 ½ cups pasta sauce
  5. 3 slices Cheddar cheese

Instructions

  1. Place each squash half in a microwave-safe bowl. Fill bowls with water and cover with plastic wrap.
  2. Heat each bowl separately in the microwave on high for 10-12 minutes.
  3. Meanwhile, heat a large skillet over medium heat; add ground beef substitute and sprinkle with Cajun seasoning. Cook until crumbly and beginning to brown, 5 to 7 minutes. Add pasta sauce and reduce heat to low.
  4. Remove flesh from the spaghetti squash with a fork and add strands to the pasta sauce mixture. Place cheese slices on top to melt. Serve immediately.
