Never before has boxed stuffing tasted so wonderful! Adding onions, scallions, celery, and chopped pears to a basic boxed mix will quickly transform it into a spectacular holiday dish. There is a lot of taste and texture in this largely handmade stuffing. It was really well received when I served it for Thanksgiving, and it was quickly devoured. Unless you let them know, your guests won’t know that it comes from a box.

Ingredients

  1. 1 teaspoon butter, or as needed
  2. 2 tablespoons olive oil
  3. ¼ cup diced yellow onion
  4. ¼ cup chopped celery
  5. ¼ cup chopped scallions
  6. 1 medium pear, cored and diced
  7. ¼ teaspoon minced garlic
  8. 2 (6 ounce) boxes dry bread stuffing mix
  9. ¼ cup chopped fresh parsley
  10. 1 (32 ounce) container chicken broth

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion, celery, scallions, pear, and garlic; cook and stir until vegetables are tender, about 10 minutes.
  3. Place stuffing mix into a large mixing bowl. Stir in cooked vegetables and parsley. Add chicken broth, 1 cup a time, and stir until broth has been absorbed by the stuffing mix and stuffing is desired consistency. Spoon stuffing into the prepared pan.
  4. Bake in the preheated oven until golden brown on top, about 30 minutes.
  5. Add less chicken broth if you like a drier stuffing, or all of it if you like it moist. Substitute vegetable broth for a vegetarian version.

This recipe is amazing, it tastes like homemade but with half the effort. It is a moist stuffing, so if you like drier stuffing you’ll probably need to reduce the broth or increase cooking time. But whatever you do, do not double the broth and then leave a bad review because you altered the recipe and it didn’t work out…2 boxes of broth will get you soup, not stuffing. The recipe is correct if you make it as directed.

I took advice and added 2 boxes instead on 1 of chicken broth because we like moist, not dry, stiffing. We hosted our daughter and her family. We had our Thanksgiving celebration the Sunday before Thanksgiving. It was a complete disaster. It was stiffing soup. I cranked up heat and cooked 2x longer than suggested. Still soupy. The bread disintegrated. I was mortified. Embarrassed. This recipe should be deleted so that no one else goes through this.

I followed the recipe to a T and I’m sorry to report that it was flavorless. My boyfriend, who is a very experienced cook (culinary arts degree to boot) argued with me that I should add something to it like butter, seasonings, anything … but I refused because I trusted the recipe and the reviews. Such a disappointment. However, I managed to save it by making a box of Stovetop that I had in hand from last Thanksgiving, and mixing it in with some herbs, spices, and even a packet of chicken ramen seasoning I found oddly in my spice cabinet. With those additions it turned out “ok”. I am thinking that maybe the recipe meant to call for Stovetop (or similar) anyway?

My family loved this stuffing, the only complaint was that I didn’t make enough. The only thing I did different was using it to stuff the turkey instead of baking it separate. I wish I had taken a photo but it was gobbled up by the time I remembered.

Not normally a huge stuffing fan, and when I do get the taste for it, I just to with Stove Top. I decided to try making it from scratch (or almost from scratch, as in the case of this recipe), and it was delicious! I did add a little extra poultry seasoning, because I love the taste, but otherwise followed exactly. I wasn’t sure about the pear, but it gives it that little something extra. My mom said, “What did you do to the stuffing? It tastes wonderful!” Will definitely make again.

I assume this would have been 5 stars if I had followed the recipe exactly! My kids did the shopping for me and got the Stove Top stuffing mix, and I just went with it. Liking softer stuffing, I used about 48 ounces of chicken broth, and it seemed too soft so I left it in the oven at least 20 extra minutes and it ended up with a pretty good texture but a slightly burned flavor. Will try again with the bagged stuffing mix and I’ll bet it will be great.

Made this again this year – many compliments. This is a great stuffing that tastes like you spent a long time putting it together, when you spend little time in the kitchen with this. Yummy!!
