Ingredients
- ½ cup hummus
- 2 tablespoons olive oil
- 2 tablespoons chopped parsley
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon water, or more as needed
- 1 tablespoon rice wine vinegar
- 1 clove garlic, minced
- salt and ground black pepper to taste
Instructions
- Whisk hummus, olive oil, parsley, cilantro, water, vinegar, and garlic together in a small bowl. Season dressing with salt and pepper. Add a few more drops of water if dressing is too thick.
- Use the herbs of your choice. Substitute 3 tablespoons dried herbs for the fresh ones, if desired.
- Use 1/8 teaspoon garlic powder instead of fresh garlic, if preferred.

Light and refreshing! I made the recipe as is and beyond that I wouldn’t change anything. Maybe more pepper or garlic could be added to your liking or a squeeze of lemon but the dressing is pretty amazing as written. I liked that it was a thicker dressing so you can spoon it over the salad, toss it and add as needed. Thank you for a great recipe!
