Roasted Garlic-Parmesan Fingerling Potatoes

  4.8 – 44 reviews  • Roasted Potato Recipes

All of our family members adore this recipe, which my sister learned from an Ohio restaurant. The flavors need time to meld because this is fairly hot.

Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Servings: 4

Ingredients

  1. 1 pound fingerling potatoes, halved lengthwise
  2. 2 cloves garlic, minced
  3. 2 tablespoons grated Parmesan cheese
  4. 1 teaspoon lemon zest
  5. ½ teaspoon salt
  6. ¼ teaspoon freshly ground black pepper
  7. 2 tablespoons olive oil
  8. 1 tablespoon butter
  9. 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Toss potatoes, garlic, Parmesan cheese, lemon zest, salt, and black pepper together in a bowl. Drizzle with olive oil and toss again until evenly combined.
  3. Heat a cast-iron skillet over medium-high heat. Add butter and heat until melted. Add potatoes; cook and toss until evenly coated with butter, about 2 minutes. Move the skillet to the preheated oven.
  4. Roast in the preheated oven until soft, 15 to 20 minutes, tossing halfway through. Remove from oven and top with parsley.

Best roasted potatoes I’ve ever had!

This recipe was fantastic. Made it as is and yielded perfectly crispy potatoes. I will try them with yukon gold using the same method but honestly they are totally worth it! Beware of the salt. If your parmesan is on the saltier than usual side, reduce the amount of salt a bit.

Easy and yummy. Whole family loved them. I didn’t bother searing in pay before putting in oven. Just melted butter, poured it in bowl over potatoes and transferred to cookie sheet.

These were absolutely delicious! I didn’t have fresh garlic so I used a little garlic powder and left out the lemon zest because I didn’t have it. Rather than beginning on the stove top in butter, (minus the potatoes), I placed everything including the butter in a large glass bowl and nuked it in the microwave until butter melted. Gave it a quick stir to combine everything and tossed the potatoes in the mixture. Baked as directed. We like the flavor that a little additional butter at the end gives so I always drizzle potatoes with some warm melted butter immediately after removing from the oven, followed by a light dusting of additional parmesan cheese. So good!

We are now a family of two as our kids “flown the nest”. Halved the recipe and made this for hubby & I. He loved the crispy exterior and the soft interior. The ONLY thing I did other than what the recipe said was to sprinkle the potatoes with a little bit of smoked paprika. Very yummy!

Use this recipe and toss them in the air fryer for 15 min or until golden brown

Outstanding!! Great recipe. Like others went right to the oven. Added more garlic as we love the stuff. And as someone else mentioned a little garlic powder and onion powder as it went into the oven.

My family and I loved this recipe! I doubled the recipe because I’m cooking for 5 people and I like to have leftovers for those busy baseball nights. I added 4 extra garlic cloves plus some garlic powder. Then added extra parmesan at the end. It was delicious

These are delicious. I used all the ingredients listed but just baked them on a sheet pan for about 25 minutes. They turned out great. I’ll definitely make these again!

Amazing recipe just as it is. And super easy to make.

The contrast of the sweet in the sweet potatoes with the salty parmesan and the hint of garlic were excellent. Very very easy to make! PS: we grew our own fingerling sweet potatoes in a potato bag — strongly recommend, nothing beats the fresh delicate flavor.

Worked great. Added some chopped onions, also used broiler for 7 minutes at end to crisp a little.
