Potato Soup with Smoked Salmon Relish

Ingredients

  1. 10 cups chicken stock
  2. 2 pounds baking potatoes, peeled and diced
  3. 1/4 cup heavy cream
  4. 1/2 pound smoked salmon, julienne
  5. 1/4 cup brunoise red onions
  6. 2 tablespoons chopped chives
  7. Drizzle extra-virgin olive oil
  8. 1/2 stick unsalted butter
  9. 1 1/4 pounds yellow onions, thinly sliced (about 4 cups)
  10. 3 ribs celery, chopped (about 1 cup)
  11. Salt
  12. Cayenne
  13. Freshly ground black pepper
  14. 1 bay leaf
  15. 3 tablespoons chopped garlic

Instructions

  1. Melt the butter in a 6-quart stock pot over medium-high heat. Add the onions and celery. Season with salt, cayenne, and black pepper, stirring, until the vegetables are soft and lightly golden, about 8 minutes. Add the bay leaf and garlic, stirring for 2 minutes. Add the stock and potatoes and bring the mixture to a boil. Reduce the heat to medium and simmer, uncovered, until the potatoes are very soft and the mixture is thick and creamy, about 1 hour. Remove the soup from the heat. Discard the bay leaf. With a handheld blender, puree until smooth. Slowly add the cream. Stir to blend. Reseason the soup. In a small mixing bowl, combine the salmon, red onions and chives. Drizzle the relish with enough oil to moisten. Season the relish with black pepper. To serve, ladle the soup into individual bowls. Garnish the soup with the relish.

Like Kristin R., I came to print a clean copy and was surprised to find only one review. One Christmas Eve I couldn’t find my family recipe for potato soup, and tried this one, and it’s been a staple for every Christmas Eve since, as well as a favorite special soup. It’s easy and so good—I’d never had thought to add smoked salmon, but it complements the potatoes and lifts it out of the ordinary.

I came to print a fresh clean copy of this recipe, I have been making this soup for years and years! It is my favorite soup, easy to prepare and delicious. I’m not much of a cook but this is something I can always make that will turn out beautifully! The best for a snowy day! I was surprised to there were no other reviews. The smoked salmon relish truly makes this soup a special treat!
