Ingredients

  1. 2 cups leftover mashed potatoes
  2. 2 cups roast beef with gravy
  3. 1 cup shredded Cheddar cheese
  4. ½ cup sour cream
  5. 4 cherry tomatoes

Instructions

  1. Pile mashed potatoes in each serving bowl to resemble a scoop of ice cream. Top with roast beef with gravy to resemble hot fudge.
  2. Sprinkle on Cheddar cheese. Dollop sour cream for the “whipped cream,” on top. Garnish each sundae with a cherry tomato.
