Corn Ribs

Ingredients

  1. 1 tablespoon brown sugar
  2. 1 tablespoon smoked paprika
  3. 1 heaping teaspoon garlic powder
  4. 1 large pinch kosher salt
  5. 1 large pinch black pepper
  6. 3 ears corn, shucked
  7. 2 tablespoons olive oil
  8. 1/4 cup mayonnaise
  9. 1/4 cup BBQ sauce
  10. 2 tablespoons brown mustard
  11. 1 tablespoon honey
  12. 1/2 cup store-bought fried onions
  13. 2 green onions, sliced thin

Instructions

  1. Preheat the oven to 425°F. Cover the bottom of a baking sheet with parchment paper.
  2. For the ribs: In a small bowl, mix together the brown sugar, paprika, garlic powder, salt and pepper. Set aside.
  3. Using a sharp knife, carefully halve the ears of corn lengthwise (see Cook’s Note). Then, cut each half lengthwise, creating 4 equal pieces. Brush each with the olive oil and season the corn with the spice mix. Transfer to the prepared baking sheet.
  4. Bake until the corn is nicely charred and the slices begin to curl, resembling ribs, 18 to 20 minutes.
  5. While the ribs bake, make the mustard mayo: Mix together the mayonnaise, BBQ sauce, mustard and honey in a small bowl. Set aside.
  6. Remove the ribs from the oven and immediately brush with a little bit of the sauce. Transfer the corn ribs to a platter. Sprinkle over the fried onions and the green onions, then serve.

My Mother loved these!! They were different and very good!! The corn ribs cut are most definitely worth the time and just can’t say enough!! Yum!

Pretty good! Did a street corn version as well that was awesome! For those of you having problems cutting the corn, your knife has to be VERY SHARP! Really not difficult if it is. Or cut the cob in half then split it in quarters, not as much cob to get through so it’ll be easier. Have also grilled the corn ribs and that makes it even better!

We love the flavors in this recipe!! I will say, the last few times we’ve gotten lazy, cut all the corn off the cobs and garnished with remaining ingredients. Its just as good, just doesn’t look as cool.

So good! Place your knife on the corn, use a mallet to tap the knife and it slides through the cob.

20 minutes sounds like too long for corn on the cob.  For those who have tried this recipe, was the corn tough after being in the oven that long?

Why not cut cobs in half first, so the ribs aren’t so long and hard to manage when cutting in the lengthwise direction?
