Ingredients

  1. 3 sweet potatoes
  2. 2 teaspoons vegetable oil, or as needed
  3. 6 tablespoons brown sugar
  4. 6 teaspoons salted butter

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a glass baking dish with aluminum foil.
  2. Pierce sweet potatoes multiple times on each side with a fork. Rub with oil and place in the prepared baking dish.
  3. Bake in the preheated oven for 1 hour, turning once after 30 minutes. Remove from the oven and let rest for 5 minutes.
  4. Slice sweet potatoes in half. Make small slits in the flesh for brown sugar and butter to sink into. Place 1 tablespoon brown sugar on each half. Place 1 teaspoon butter on each half.

I didn’t use the butter in order to make these vegan. The soft texture of the sweet potato and the oil on the skin was enough to make these melty and flavorful. I love sugar, so plain brown sugar without butter was good enough for me.
