Cool Cucumber Soup

Ingredients

  1. 3 cups plain nonfat yogurt
  2. 1 English cucumber (about 1 pound), cut into chunks
  3. 1 scallion, white and green parts, coarsely chopped (about 1/4 cup)
  4. 3 tablespoons chopped fresh dill, plus sprigs for garnish
  5. Salt and freshly ground black pepper
  6. 1 medium tomato (about 5 ounces), seeded and diced
  7. 2 teaspoons olive oil

Instructions

  1. In a blender, combine the yogurt, cucumber, scallion and dill. Pulse until pureed. Season, to taste, with salt and pepper. Ladle into individual bowls. Top each serving with 2 tablespoons of diced tomato, drizzle with 1/2 teaspoon of olive oil and garnish with a dill sprig.

My girlfriend prepared this soup for lunch today, and it was very tasty. I think it makes a good appetizer or a starter dish. I have also added some garlic to it. I would recommend to also have a nice salad dish with some whole grain bread to chase it.

It was good, not delicious – just good. I used low-fat, greek yogurt instead of the regular, plain yogurt (about 1 3/4 cups). I didn’t use the full 3 cups of yogurt to avoid it becoming too thick.

Next time, I’m going to try cutting back on the dill. The tomato garnish was great.

I really loved this. My husband liked the flavor but not the texture. I may have pureed it too much. I will try this again but in addition will add chunks of cucumber and more diced tomato. I didn’t have fresh dill so I added a tablespoon of dried and it was just enough.

I usually choose recipes by what recieves the most and best ratings… but I will not try this recipe again. Followed all instructions, and taste is just bland.
