Sweet Potato Latkes

Ingredients

  1. 2 cups zucchini, (do not peel) grated
  2. 2 cups sweet potato, peeled and grated
  3. 1/2 cup parsley, chopped
  4. 1/2 cup onion, chopped
  5. 3 eggs
  6. 4 tablespoons flour
  7. 1 tablespoon corn flakes, crushed to crumbs
  8. 1/2 teaspoon salt
  9. Ground black pepper, to taste
  10. 4 tablespoons oil

Instructions

  1. In a large bowl, mix together the zucchini, sweet potato, parsley, onion, eggs, flour, corn flakes, salt and pepper. Heat a large nonstick pan and add 4 tablespoons of oil. Carefully drop tablespoons of batter into the pan. Fry the latkes, turning when crisp. Oil may be added to pan in small amounts as needed when frying. Put on paper towels to absorb excess oil.

These were really good. I used yellow squash and tasted great. I burnt a couple but all still taste awesome.

So delicious! I made these, but didn’t have corn flakes on hand so I substituted almond meal and they had a nice sweetness. Next time I will add more onion and parsley to give it more of a savory flavor.

My Polish/Russian parents taught us the savory delights of the crispy, crunchy exterior and delicate chewy interior of potato pancakes (latkes). Nothing prepared us for the delectable sweetness of this Sweet Potato/Zucchini treat. Since finding this recipe several years ago our large gatherings MUST include both the old and new style Latke and no matter how much I prepare it’s never enough. Remember to use Italian (flat leaf) parsley and for an interesting, more aggressive, flavor you can try substituting it with cilantro.

I’ve been making these latkes every Hanukkah ever since I saw this show three years ago. I used Egg Beaters instead of the 3 eggs. They are great and healthy. A good way to get your kids to eat vegies.
