Ingredients

  1. 2 pounds buttercup squash, halved and seeded
  2. 2 baking apples, cut into 1/2-inch slices, or more to taste
  3. ½ cup packed brown sugar
  4. ¼ cup butter, melted
  5. 1 tablespoon all-purpose flour
  6. 1 teaspoon salt
  7. ½ teaspoon ground mace
  8. ½ cup dried cranberries (Optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×11-inch casserole dish.
  2. Place squash on a flat work surface. Trim off the hard outer rind with a knife. Cut squash into 1/2-inch slices; arrange slices over the bottom of the prepared dish. Arrange apples on top.
  3. Combine brown sugar, butter, flour, salt, and mace together in a bowl. Pour mixture over the apples. Sprinkle cranberries on top.
  4. Bake in the preheated oven until top is golden brown and apples are tender, 50 minutes to 1 hour.
  5. You may substitute 1/4 cup maple syrup for 1/4 cup of the brown sugar.
  6. Butternut squash may be substituted for the buttercup squash. You can slice the squash into slightly bigger pieces.

This was a hit at our family Christmas table. I changed it up by using delicata squash because it’s sooo much easier to prepare than the thick skinned squash varieties. The mace, instead of the more common cinnamon, adds a delicate spicy touch. I followed the suggestion for 1/4 maple syrup with 1/4 brown sugar. Here in New England, we use our maple syrup every chance we get!

Actually quite surprised! Not really a big fan of squash and/or apples, but we happened to have a buttercup squash and some apples in the kitchen, so I figured “what the heck “. It was pretty darn tasty! And not too hard to make. Even threw in the cranberries!
