Ingredients
- 1/2 cup flour
- 1/2 cup cornstarch
- 1/2 teaspoon kosher salt
- 1 cup water
- 1 egg
- 2 cups breadcrumbs
- 1/2 cup grated pecorino
- 2 large zucchini sliced 14 inch thick
- salt and pepper
- mayonnaise mixed with chopped parsley and lemon juice
Instructions
- Whisk 1/2 cup each flour and cornstarch, 1/2 teaspoon kosher salt, 1 cup water and 1 egg in a bowl. Combine 2 cups breadcrumbs and 1/2 cup grated pecorino in another bowl. Slice 2 large zucchini 1/4 inch thick; dip in the batter, then dredge in the breadcrumb mixture. Fry in 1/2 inch of 350 degrees Fvegetable oil until golden, 3 minutes per side. Drain on paper towels and season with salt and pepper. Serve with mayonnaise mixed with chopped parsley and lemon juice.

Oh my goodness…this is fantastic! I didn’t use pecorino but substituted 1/2 cup Kraft parmesan cheese…the real fine stuff in the green can. We used ranch dressing for a dip. I will be making it again tonight. I had to babysit it while cooking so that I didn’t burn it, but boy…was it ever worth it. Nice and golden brown and crispy! I have several fried zucchini recipes for baked, fried, air fried…this is THE BEST.
