Russians refer to it as “Korean Carrot Salad,” but even if they didn’t invent it, they most definitely do now because it is so often consumed there. The predominant flavoring is coriander, while the heat is cayenne. For best results, julienne the carrots into long, thin strands that resemble spaghetti with a mandoline. Purchase them already julienned at the grocery store to save time. Although it is still edible after only 4 or 5 hours, this meal tastes best after marinating for 24 hours.

Ingredients

  1. 3 cups warm water (110 degrees F/45 degrees C)
  2. 2 (.25 ounce) packages active dry yeast
  3. ⅔ cup honey, divided
  4. 5 cups bread flour
  5. 5 tablespoons butter, melted, divided
  6. 1 tablespoon salt
  7. 4 cups whole wheat flour, or more as needed

Instructions

  1. Mix warm water, yeast, and 1/3 cup honey in a large bowl to dissolve. Add 5 cups bread flour, and stir to combine. Let sit for 30 minutes, or until big and bubbly.
  2. Mix in 3 tablespoons melted butter, remaining 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Transfer dough to a floured work surface and gradually knead in remaining 2 cups whole wheat flour. Knead until dough starts to pull away from the work surface, adding more whole wheat flour if necessary; dough should be a bit tacky to the touch, but not too sticky.
  3. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dish towel and let rise in a warm place until doubled, 45 minutes to 1 hour.
  4. Grease three 9×5-inch loaf pans. Punch down the dough, and divide it into 3 loaves. Place in the prepared loaf pans, and allow to rise until dough has topped the pans by one inch, another 45 minutes to 1 hour.
  5. Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  6. Bake the risen loaves in the preheated oven until golden brown for 25 to 30 minutes, do not overbake.
  7. Lightly brush the tops of the loaves with remaining 2 tablespoons melted butter when done to prevent crust from getting hard. Cool completely.

I made three for my farmers market booth, and they all sold! I added cinnamon and raisins to one, chopped pistachios, pepitas and sunflower seeds to another, and left the third plain. I will hear this weekend from my customers what they liked and didn’t like, so no feedback on that, but this recipe was easy to make, dough was easy to work with and I will be making again.

I didn’t have bread flour so used whole wheat mostly and some white flour for rolling. They look great and I am not a bread maker! I did add some cardamom, nutmeg and allspice for fun. Otherwise I followed the recipe with I believe 1 c less flour total. Easy! Tastes a bit bitter. Not sure why. Consistency is excellent.

I tried this recipe using molasses instead of honey, because I was out of honey. It seemed like far too much flour at first, but after working the dough for some time it came together nicely. End result was very good. Thanks for sharing your recipe.

This bread is excellent. It was the only bread my husband ate until I discovered a cheesy bread recipe. We switch back and forth. You can also roll it out, brush butter on it, add brown sugar & cinnamon. Roll it up, slice it and make cinnamon rolls.

Amazing flavor! Made a few adjustments. Reduced wheat flour to 2 cups. Used organic all purpose flour for the rest. Sub molasses and brown rice sugar for honey, reduced amount by half. Made 2 loaves instead of three.

I would not recommend this recipe. I tried this recipe; I followed the recipe to the letter, and it turned out nasty. It started out great. The bread rose well and when I put it in the oven in my Pullman bread pans with lids it came out flat. The end result sure did not look like the pictures. I have been making bread for many years. I have never had bread turn out this bad.

Great! Was a little leary after hearing how hard it was to make a good, soft wheat bread, but this was excellent. I even lowered the wheat to bread flour quite a bit, next time I think I will try it 100% wheat. No fail recipe.
