This rustic whole grain bread recipe may be completed in a little more than an hour, which is far faster than the typical preparations. Simple, fast, and delectable.

Ingredients

  1. 3 cups all-purpose flour
  2. 3 cups whole wheat flour
  3. ¼ cup brown sugar
  4. 2 tablespoons instant yeast
  5. 1 ½ teaspoons salt
  6. 3 ½ cups warm water (110 to 120 degrees F)
  7. 2 tablespoons vegetable oil

Instructions

  1. Stir together all-purpose flour, whole wheat flour, brown sugar, instant yeast, and salt in the bowl of an electric mixer fitted with a dough hook attachment. Whisk together water and oil in a cup; pour into flour mixture. Mix on low speed until dough pulls away from the sides of the bowl into a ball.
  2. Turn dough out onto a lightly floured surface; knead just until dough is smooth, about 1 minute. Divide and shape dough into 3 balls for small loaves or 2 balls for larger loaves. Dust loaves with flour and place onto a baking sheet. Cover with a towel and let rise until doubled in size, about 25 minutes.
  3. Preheat the oven to 375 degrees F (190 degrees C). Slash an “X” about 1/4-inch deep in tops of loaves with a sharp knife.
  4. Bake in the preheated oven until loaves are golden brown and sound hollow when tapped, about 25 minutes. Remove from the oven; transfer loaves to a wire rack to cool completely.
  5. For extra depth, substitute 1/2 cup of whole wheat flour for 1/2 cup of quick oats.
  6. The number of servings is dependent upon the thickness of the slices. I recommend making three loaves the first time.

The ratios are all wrong. This made a colossal mess. I proofed the “dough” twice and it was still too runny. Never even got to the baking stage. I had to throw it all out.

I like this recipe, I didn’t read the reviews before making it. Fortunately I always add the water little by little when kneading the dough in the standing mixer. I stopped at 2 and 1/2 cups and add couple of flour sprinkles so it will not stick to the mixing pan. The dough turned out very soft and it raised good enough. Love the end result because the bread was fluffy and moist. I agree the recipe needs improvement.

I’m glad I read the reviews before I made this. I used 2 1/2 c of water and had to add 3/4 c more flour. It is very tasty and soft. I think I might bake it at a higher temperature next time to make the crust a little crisper.

Definitely would not trust the amount of water in this one. Add the oil with a cup of water and slowly add more water as needed.

I’ve made this bread three times. It’s easy to make, fast and truly delicious. I read the reviews prior to making it, so I reduced the water to approximately 2 1/2 cups. Next time I make it, I’m going to try adding harvest grains. I’m happy I found this recipe!

So much went wrong when I made this bread, it should have been horrible, but it was great. I put in easily 3 c of flour extra. Honestly lost track of how much extra. Ran out of wheat flour- used cornmeal. Dough never pulled away from bowl into a ball. I eventually started stirring, gave up and started kneading. I kneaded it for 10 min, not one. I baked it for easily 20 min longer than directed. and probably could have baked a bit more. I let it raise two hours, and it raised nicely. I have served my husband so much flat failed loaves of bread that I was super excited to have this bread turn out. (I added sunflower seeds too, as I was worried about lack of flavor after added so much more flour. ) I made two big loaves.

Wow, I usually read the reviews before I make something. Didn’t this time or I would have known to add more flour. I had to add 2 cups of extra flour just to get it to where I could knead it.

Reading the reviews about having to add more flour and how wet the mixture was I pulled out my scale to work with the recipe knowing we all measure flour differently. Following the recipe, I reduced the water to 3 cups and (weighing the flours) put in 339 grams whole wheat flour (113 per cup) and 4 cups, 480 grams all flour (120 per cup).

The water measurement is way too much. By the time I added more flour, it is difficult to say what the original flavor should have been. If I make it again, I will cut the water by at least a cup.

It came out OK, the flavor is very delicate. Next time I will try adding more things to give it a more robust taste. OMG I was dumping in so much extra flour it was truly distressing. I think the added flour took away from the salt and brown sugar tastes. It would be nice if the creator of this recipe adjusted the ingredients’ measurements.

The recipe calls for far too much water. Added extra flour but the bread still didn’t turn out well. I’ve had much better luck with other recipes.

We loved the result, but had to add an additional cup of whole wheat flour to keep it from being too moist to knead well. We’re on our fourth batch now. It is especially delicious when the slices are toasted.

Loved it. It took an hour to rise, and I added honey, flaxseed, oats, and a bit more flour than suggested by the recipe because it does, indeed, get gooey otherwise, like other reviewers suggested. Also, I used my hands instead of a mixer, and it was fine.

great, easy way to make bread w/out a bread machine. I found this recipe fast and straight forward. I did add some oats and flax seed for texture. I needed to add additional flour to work with dough. my kids loved it, and that is high praise 🙂
