The ground cloves and chicken spice are the key ingredients in this delicious Christmas treat, which is an old family tradition. We’ve always prepared our tourtieres in huge quantities because they freeze well and are a nice quick fix during the hectic holiday season!

Ingredients

  1. 1 ¼ cups water
  2. 4 teaspoons almond oil
  3. 1 teaspoon salt
  4. ¼ cup honey
  5. 1 cup almond flour
  6. 2 cups whole wheat flour
  7. ¼ cup vital wheat gluten
  8. 1 teaspoon xanthan gum
  9. 1 (.25 ounce) package dry yeast

Instructions

  1. Combine water, almond oil, salt, honey, almond flour, whole wheat flour, vital wheat gluten, xanthan gum, and yeast, respectively in a bread machine. Follow manufacturers’ instructions for a 2-pound loaf.
  2. Follow your bread machine instructions for the ingredient order. My machine requires me to put the liquid in first, then follow with the dry stuff.

It was really good and turned out perfectly! The only change I made was that I didn’t have almond oil, so I used coconut oil instead. I’m back at making bread with a machine after many years and now avoiding white flour and sugar so finding recipes like this is so great! Thank you!

I was really impressed how well this came out on my first try. It’s delightfully fluffy and just a tiny bit sweet. I did substitute sunflower oil for almond oil because I didn’t have almond oil. I suspect it didn’t matter much; I can certainly recommend it with sunflower oil in any event. I might try it on the 1.5 lbs loaf setting on my bread machine the next time I make it. It’s just a little dark on the outside and it seems smaller than other two pound loafs I’ve made.

Made as is and we love it. Had too much almond flour and looked for recipes –this is great. No one even seemed to notice. Added sesame seeds the second time I made it–gave it an extra crunch

Excellent bread! I made it exactly as written in my bread machine. Ingredients are expensive but worth it if you plan to make it several times which I have. My husband loved it also and I plan to make one for my neighbor who tried it.

Great recipe and made beautifully in the bread machine. couldn’t find almond oil, but just used what I had. also couldn’t find the xanthan gum, and truthfully, I don’t know why that is an ingredient. the bread has great taste and texture – cuts perfectly.

This loaf was excellent! I was skeptical because of the almond flour (which I love) but the rise, crumb and texture were very good. Wonderful aroma while it was cooking! (I should add that I used coconut oil, rather than almond oil.) My husband even commented on the aroma. Great loaf of bread with all the extra goodness and health benefits of almond flour and whole wheat. Thanks for the recipe!
