I was looking for 100% whole wheat bread with a nice rise and flavor that would go well with PB&J sandwiches. This recipe rises more than the white bread flour recipe I used to make, in addition to tasting wonderful. It freezes well and is tender as well. On Sunday, I make my bread, and on Monday, I prepare and freeze my sandwiches. I take one out of the freezer every day, and the one from Friday is just as tasty as the one from Monday. Use any flavor of jelly.

Ingredients
- 10 ounces water
- ½ cup peanut butter
- ½ cup strawberry jelly
- 1 ½ tablespoons light brown sugar
- ½ teaspoon salt
- ¾ teaspoon baking soda
- ¾ teaspoon baking powder
- 3 tablespoons vital wheat gluten
- 3 ⅓ cups whole wheat flour
- 1 tablespoon whole wheat flour
- 1 ½ teaspoons active dry yeast
Instructions
- Place water, peanut butter, jelly, brown sugar, salt, baking soda, baking powder, gluten, 3 1/3 cups plus 1 tablespoon whole wheat flour, and yeast, respectively, in the pan of a bread machine. Select 1 1/2 Pound Loaf, Medium Crust, Wheat cycle, and press Start.

While this is cooking it smells like peanuts and marshmallows! I make a lot of jams so this bread is handy to help use up my stocks.i made my loaf with marmalade. Amazing. Proves how versatile this recipe is. I also swapped out one cup of the flour for white flour, and I didn’t add any vital gluten. Made a tender loaf that still hangs together for cutting. The peanut flavor is not strong, just toothsome. I am going to try making French toast with it too…though it is flat out delish just with butter and a cup o’ something hot.

I actually really liked it. The first time I made it, I used honey instead of jelly and it didn’t bake all the way through (and I used an Oster bread machine as was in the directions). Even after baking it an additional fifteen minutes in a conventional oven, a significant portion in the middle never set. The next time I made it, I stuck to the recipe and used jelly, and it came out perfectly!
It was okay. The peanut butter flavor was mild, but left that dry PB taste in my mouth. I think I expected to actually taste jelly, but I guess it was to just serve as a sweetener. Texture was nice though.
Love the recipe, as I am always looking for healthier ways to feed my family. This is almost like a dessert bread, I used grape jelly as I am allergic to strawberry. But will experiment with different jellies to see if the flavor changes. I used a regular oven instead of a bread maker, bread came out fine. Cooked it for about 1hr and 15 mins on 350.
