Ingredients
- 1 pound strawberries, hulled and halved
- 2 teaspoons olive oil
- 5 tablespoons sugar
- Kosher salt
- 1/4 cup Vin Santo wine
- 3/4 cup heavy cream
- 1/4 cup mascarpone
- 1/2 cup gently crushed amaretti cookies or almond biscotti
Instructions
- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Add the strawberries, oil, 2 tablespoons of the sugar and a pinch of salt to the prepared baking sheet. Toss well to coat evenly and spread out on the baking sheet. Roast until the strawberries are soft and have released some of their juices, about 30 minutes. Pour the strawberries and the juices into a bowl and toss with the wine. Allow to cool to room temperature.
- Meanwhile, in a medium bowl, whisk the heavy cream with the mascarpone and the remaining 3 tablespoons sugar until soft peaks form, about 3 minutes.
- To serve, divide the strawberries among small serving cups or coupes. Dollop with the cream and sprinkle with some of the cookie crumble.

This dessert is fabulous, and so easy to make. LOVED the roasted strawberries, the addition of the mascarpone to the cream, and the crunch of the biscotti. I will make this again and again, and will always roast strawberries! So, so yummy.
If you don’t want use any liquor what else would you suggest.
Roasting strawberries with oil and sugar… It’s very good! And soaking them in liquor is the best part. I couldn’t find Vin Santo, so I used Framboise liqueur which is what I had on hand. It actually came out great.
While this recipe is simple, the final reward was not worth the effort. First, Vin Santo wine is almost impossible to find, so knowing this, why not inform the viewer/reader of alternatives? I did like combining the heavy cream with mascarpone to make the whip cream, but just purchasing ready made whip cream would have made the recipe even easier. I know these recipes are about making things from scratch, but making things easy is easier. I’m always looking for a good simple recipe, but it also has to be worth the work. This one isn’t it for me.
This was so easy to make. Due to quarantine life, I didn’t have Vino Santo or cookies on hand. So, I used ButterScotch Liqueur and sliced almonds and it came out perfect. It’s so amazing how you can take simple ingredients and make something taste so decadent.

Such an easy and amazing dessert – I loved this!! This episode was really fantastic. I can’t wait to make everything. Btw, can someone please tell me how Giada stays so incredibly thin??!!?? She literally looks like she’s a Size 0! How does she do it? With all the amazing food she cooks, she must eat hardly any of it! Because let me tell you, it takes eating next to nothing to be that skinny…especially when you’re 50 or close to it!! Hats off to her though; she looks amazing and is very inspiring.
