Bobby’s Old Fashioned

Recently I asked Bobby Flay about his favorite teas and one of them was the classic English breakfast variety. I wanted to do a twist on a classic cocktail for Bobby, so I came up with an English breakfast tea-infused honey, which would complement bourbon well and become part of a type of old fashioned. I find that an old fashioned is always a tried-and-true elegant classic, and very real – just like Bobby.  To complement the tea and honey, I garnish with an expressed lemon twist instead of an orange twist, much like how you might want lemon with your tea and honey in the mornings, as well as keeping it in our club colors. Today at Club 3 we happen to have 23-karat gold flake to garnish, so I will add that (after expressing the lemon oil and discarding the twist) for that extra-exclusive Club 3 flair.

Ingredients

  1. 2 ounces whiskey of choice
  2. 1/2 ounce Breakfast Tea-Infused Honey, recipe follows
  3. 2 dashes Angostura bitters
  4. Lemon twist, for garnish
  5. Edible gold flakes, for serving, optional
  6. 6 English breakfast tea bags
  7. 2 cups honey

Instructions

  1. Add the whiskey, Breakfast Tea-Infused Honey and bitters to a mixing glass, fill with ice to the top, stir for a good 25 seconds (see Cook’s Note) and then pour over an ice-filled rocks glass. Garnish with the lemon twist. If using gold flakes, express the lemon oil from the twist over the drink, then discard the twist. Garnish with the gold flakes.
  2. Put 3 of the tea bags in a small pot and add 1 cup hot water. Let steep for about 5 minutes, then discard the tea bags. While the tea is still at room temperature, stir in the honey. Add the remaining 3 tea bags and let steep for about 20 minutes, depending on how strong you want it. Store in the refrigerator for up to 1 week.
