Waffled Leftover Thanksgiving Brunch

Invite friends and family back over to re-celebrate the holidays with this unique brunch made from leftovers. The stuffing works perfectly in waffle form, topped with all the trimmings.

Ingredients

  1. 4 1/2 cups crumbled leftover stuffing
  2. 1/4 cup chopped fresh parsley
  3. 2 large eggs, beaten
  4. Vegetable oil, for brushing waffle iron
  5. Sliced leftover turkey, gravy and cranberry sauce, for serving

Instructions

  1. Preheat a waffle iron to medium-high. Combine the stuffing, parsley and eggs. Generously brush the top and bottom of the waffle iron with oil. Evenly and firmly pack each section of the waffle iron full with the stuffing mixture. Close and cook until golden and the waffles can easily be lifted out of the waffle iron, 4 to 6 minutes.
  2. Meanwhile, heat the gravy in a small saucepan. Once the waffles are ready, top each with as much turkey as you want and close the waffle iron. Cook until the turkey is warmed through, 2 to 3 minutes.
  3. Transfer the waffles to 4 plates and top each with as much gravy and cranberry sauce as you’d like.

Great any time, I have used Stove top boxed stuffing (gasp) for a waffle and used sliced turkey I added d cranberries to the waffle mix.

These were awesome! The crunchy bits tasted AMAZING! I was so annoyed that I didn’t have much stuffing left over from TG. I’m making them tomorrow with Ina’s perfect roast chicken for a birthday request. For like 10 people! Beware, tho, these ARE heavy!

Not what I thought, but still good. I was thinking these would be a substitute for bread to make a wonderful turkey sandwich. However, they are very heavy and don’t hold together well, or at least mine didn’t. So on a plate with turkey and hot gravy, better choice.
